Yam Cake

A simple and delicious yam flavored cake.

Ingredients
-4 whole eggs, 2 egg yolks
-100g castor sugar
-50ml water
-2 tablespoons ovalet
-100g Superfine or Hong Kong flour
-1 teaspoon baking powder
-60g cornflour
-75g butter, melted

For Filling
-200g yam, boiled and pureed (in a food processor)
-100ml evaporated milk
-2 to 3 tablespoons of condensed milk
-1 teaspoon of purple coloring

For Topping
-500ml whipping cream
-80ml evaporated milk
-1 teaspoon purple coloring

Method:
1) Set oven at 180 degree Celsius. Mix the eggs, water, ovalet and sugar in mixing bowl and beat for 3-5 minutes, high speed, until mixture turns fluffy.
2) Sift flour, baking powder and cornflour into egg mixture and beat for 3-5 minutes, high speed, until mixture turns pale.
3) Add in melted butter and beat for 1 minute, medium speed.
4) Grease baking tin and pour in the mixture.
5) Bake in the oven for 40-50 minutes or until done.
6) While waiting for the cake to completely baked, mix the pureed yam, evaporated milk, condensed milk and purple coloring. Mix well.
7) Mix and beat the whipping cream, evaporated milk and purple coloring until the cream is whipped and firm.
8) When the cake is done, take out from the oven and set aside to cool. Use a knife to cut the cake into half horizontally. Spread the filling in between the cakes. Then, cover the whole cake with whipped cream and decorate the cake as you wish to. Serve.
